This One Takes the (Pound) Cake!


Anybody else recall the scrumptious and easy “Flag Cake” from Fourth of Julys past? I can still remember wearing my hair Princess Leia style (after all, Star Wars was all the rage) while enjoying this dessert.  Mom is pretty sure she got it off the Cool Whip package, though it may have been off of a Sara Lee pound cake package – we’re not entirely sure.  But, really – with Cool Whip and Sara Lee pound cake as the main ingredients – you can’t go too far wrong.

You just slice the pound cake up and put the pieces along the bottom of a 13 x 9 cake pan.  Then put a layer of sliced strawberries and blueberries over the cake, and top with an entire carton of Cool Whip.  And seriously, don’t try to substitute real whipped cream – I said Cool Whip and I meant it.  Then make the “flag” out of a rectangle of blueberries in the left hand corner and stripes of strawberries and refrigerate. It could not be easier, cheaper or more delicious.  The most surprising thing of all is how great this actually tastes – Here’s to a Fab and Fru Fourth!
