In honor of St. Patrick’s Day, you may have noticed we’re really on the “green theme” this week. Green snack foods seem to be few and far between, but one of my favorites – Baked Kale Chips – is sure to be as big a hit in your household as it is in mine! Both Brandi and my sister Caroline have been making kale chips for ages. Though I was skeptical at first, once I tried them I was hooked! So simple, healthy and delish. And so fab and fru – instead of spending a lot of money for a tiny, half-full bag of “Veggie Chips” at the store, you can spend a dollar or two for a big bunch of kale and really stretch your snack dollar, with the bonus of using one of the healthiest foods around!
One bunch kale, washed and dried VERY well
Cut Kale into chip size pieces with kitchen shears
Toss with olive oil, salt and pepper and lay on a cookie sheet
Bake at 400 degrees, flip over about every ten minutes – can take up to 30 min or so to cook. Keep your eye on it!
Let cool and crunch away!| Print
