The origins of many of our Easter traditions are rooted in the Anglo-Saxon festival of Eastre, when spring was celebrated as a time of rebirth and fertility.   Eggs and rabbits became the ultimate symbols of spring, which is why to this day the coloring, hunting for and EATING of eggs remain a highlight of the Easter holiday.
