The ELAT Sandwich


Egg, Lettuce, Avocado, & Tomato

This twist on the classic BLT (minus the bacon) is a tasty, healthy & satisfying sandwich to enjoy morning, noon or night!

Serves 1 (but it’s super easy to make multiple sandwiches!)

Ingredients:

  • 1-2 eggs
  • 2 slices of tomato
  • 1/2 an avocado
  • Lettuce of your choice
  • 1 slice sharp cheddar cheese- optional
  • 2 large slices of sour dough or Italian bread (can substitute with a non crumbly seven grain too)
  • Mustard or Mayo- optional

To Prepare:

Slice the avocado, tomato and lettuce & set aside so they are ready when it is time to assemble the sandwich.  Heat a skillet with a little vegetable oil to fry with the eggs.  Toast the bread in a toaster or grill it on the stove in a pan (like a grilled cheese).  Once almost fully toasted, lay a slice of cheddar on one piece of bread so it had time to melt. Fry your eggs to your liking, but when the yolk is slightly runny- this sandwich is at it’s best!

Before assembling your sandwich, spread mustard and or mayo on the bread if you like.  Layer all the ingredients on a slice on bread and top them with your piping hot over easy egg.  When your sandwich is fully assembled, cut in half and enjoy.  It’s messy but totally worth it!
