A Healthy & Hearty Meal For Less Than $2 a Serving!
*Serves 6-8 people
1 Medium Whole Chicken
1 Large Onion
3 Celery Stalks
1 or 2 Bay Leaves
4-5 Garlic cloves
1/4 pound of uncooked Macaroni (optional)
Parmesan Cheese (optional)
Salt & Pepper to taste
Clean the chicken and remove some – but not all- of the skin & fat from the bird. Place the chicken in a large soup pot and fill the pot with water until it covers the chicken. Chop the onion, garlic, carrots , celery, tomatoes and potatoes into large pieces and add to the pot. Add salt & pepper to taste, bring to a boil and simmer for 1 and 1/2 hours. Remove the chicken from the broth and and skim any fat and residue out of the broth (you may have to do this several times).
Remove the chicken meat from the bones, and add the cut meat back into the broth. Add a hand full of chopped fresh parsley to the broth. Taste the soup to see if it needs more salt or pepper, and let the soup simmer for another 45 minutes to an hour.
If you are making chicken noodle soup we advise cooking the noodles separately and adding them when you are ready to serve. This way if you freeze the soup and reheat it you can add fresh noodles each time instead of turning them into overcooked little bits!
