Paul’s Potatoes Colcannon
- 4 pounds of organic potatoes, cubed (leave the skins on for extra fiber)
- 1/2 pound scallions, chopped
- Half a head of kale or cabbage (chopped thin or shredded)
- 1 cup whole milk or cream
- Sea salt to taste
- Black pepper to taste
- 4 ounces butter
Boil the potatoes until cooked. Simmer the green onions in milk for about 5 minutes. Drain potatoes and mash. Add the hot milk scallions, kale or cabbage, salt, pepper and half the butter and mix.
HINT: The secret of success to making this Irish mash extra good is making sure all the ingredients are kept very hot while you’re preparing the dish… Enjoy!
