Irish Mash Potatoes

Paul’s Potatoes Colcannon


  • 4 pounds of organic potatoes, cubed (leave the skins on for extra fiber)
  • 1/2 pound scallions, chopped
  • Half a head of kale or cabbage (chopped thin or shredded)
  • 1 cup whole milk or cream
  • Sea salt to taste
  • Black pepper to taste
  • 4 ounces butter


Boil the potatoes until cooked. Simmer the green onions in milk for about 5 minutes. Drain potatoes and mash. Add the hot milk scallions, kale or cabbage, salt, pepper and half the butter and mix.

HINT: The secret of success to making this Irish mash extra good is making sure all the ingredients are kept very hot while you’re preparing the dish…  Enjoy!
