Best Vegan Stuffing


Serves about 10…

Ingredients:

  • 10 cups 1/2 inch bread cubes of firm wheat or crusty French bread
  • 3-4 tablespoons of extra virgin olive oil
  • 2 – 3 cups vegetable stock
  • 3 cloves of minced fresh garlic
  • 1 cup chopped onion
  • 1 1/2 cups finely chopped celery
  • 1/2 cup minced fresh parsley
  • 1 1/2 tablespoon of fresh sage or 1 1/2 teaspoon of dried sage,
  • 1 tablespoon of fresh thyme or 1 teaspoon dried thyme leaf
  •  1/2 tsp Kosher or sea salt
  • Pepper to taste
Preparation:
  1. Preheat oven to 400 degrees. Oil a large baking pan.
  2. Toast bread cubes in a large baking sheet in the oven until golden brown. Set aside in a large bowl
  3. Turn oven down to 350 degrees F
  4. Heat 2-3 Tbsp olive oil in a large skillet on medium heat. Sauté onions, garlic, sage, thyme and celery until soft
  5. Slowly pour your veggies into to the bowl of bread crumbs and stir well
  6. Add parsley, salt, and pepper
  7. Stir until the bread is well coated
  8. Slowly add 2 cups vegetable stock, and stir until the bread is moist.  Add more stock as needed – but never too much to make the bread soggy
  9. Bake in a covered baking pan or casserole dish for 25 minutes
  10. Uncover the casserole dish and bake another 10 minutes or until the top of the stuffing is brown and crispy.  A vegan dish everyone will love!
