Lemon Ricotta “Cash Crunch” Crostini

Fancy & Frugal Summer Fare

It’s the height of summer, and surely you are doing a lot of entertaining and being invited to more get-togethers than one can possibly handle.

The constant challenge, of course, is how to wow a crowd – for less! Which is why our summer “Cash Crunch” Crostinis are the perfect recipe to fill up your guests without emptying your wallet.

Perfect for summer, lemon adds an unexpected element when paired with ricotta and honey!

* Makes 15-25 Crostini

 

Ingredients:

A good French baguette

Olive oil

1/2 Pound Fresh Ricotta Cheese

1 lemon (using rind only)

Honey

Ground Black Pepper

Sea Salt

Instructions:

First, prep the bread – cut the baguette in about 1/4 inch slices, at a slight angle.  Place slices on cookie sheet and lightly brush each one with olive oil. Toast just until they start to brown around edges and oil bakes in – DO NOT OVER-TOAST.  They should be toasty on the edges and slightly chewy in center. Let cool. (This step can be done in advance – yay!)

Then, for the crowning glory – Zest the rind of the entire lemon. Mix together the ricotta, half the lemon zest, and salt and pepper to taste. Drizzle each crostini with honey. Then put a healthy dollop of the ricotta mixture on each piece of toast.  Garnish with a tiny bit of lemon zest and pepper.  That’s it – time to delight your guests with this fancy and frugal summer fare!

  • Honey
  • 1 Lemon (clean skin well – using the rind only)
  • Ground Black Pepper
  • Sea Salt

    I made this and placed a grilled shrimp on each cristino. On a different batch added diced chicken and tarragon and finally I did a crab and minced red bell pepper. Very good and way too easy not to try.
