Citrus Mint Salad


Serves 8 – as a side dish


  • 2 Large Ruby Red Grapefruits
  • 2 Large White Grapefruits
  • 4 Navel or Valencia Oranges
  • 1/4 cup fresh chopped mint
  • 1/4 cup of honey or agave (or to taste). Note agave can be sweeter than honey, so be sure to test the sweetness


Peel and slice each piece of fruit into disks (4-5 slices per fruit). Chop the mint finely (leave a few sprigs unchopped for decoration). Very gently toss the fruit slices in a bowl with the honey (or agave) and the mint. Then arrange them in 4-5 rows (5-6 slices per row) on a platter.  Another option is to arrange the slices in rows first, drizzle the honey over the fruit and sprinkle the mint. We like to display a row of grapefruit (alternating ruby slices with white) next to a row of all oranges.
